Sherri's Sweet Potato Bake

Title: Sweet Potato Bake

Calories:

Serves: 6

Oven: 325

Ingredients:
3 medium sweet potatoes
1 cup sugar
1/3 cup melted butter
2 eggs
1 tsp vanilla
1 tsp cinnamon
¼ tsp nutmeg
¼ cup heavy cream

Topping
1 cup brown sugar
1/3 cup flour
3 tbsp melted butter

Directions:
Mix all ingredients except topping with mixer until creamy. Fold into 8x8 baking dish. Sprinkle topping. Bake at 325 for 25-30 minutes.

Sheri's Cheese Potatoes

Title: Cheese Potatoes

Calories:

Serves: 4

Oven: 350

Ingredients:
7 medium potatoes, boiled, cooled and sliced thin
¼ cup butter
1 can cream of chicken soup
8 oz sour cream
1/3 cup chopped green onions
1 ½ cup shredded cheddar cheese
Topping (see below)

Topping
¾ cup cornflakes or planko crumbs
¼ cup butter melted

Directions:
Boil, cool and slice potatoes thinly. In a large pan, melt butter. Add soup, sour cream, onions and cheese. Melt over medium heat. Fold in potato slices. Pour into a baking dish and bake at 350 for 45 minutes. Top with cornflakes and butter or planko crumbs for a crunchy top.

Sherri's Potato Wedges

Title: Potato Wedges

Oven: 375

Ingredients:
3 large potatoes
½ cup mayo
½ tsp hot sauce
¼ tsp onion salt
½ tsp house seasoning (see below)
1/8 tsp pepper
2 cups corn bread dressing mix

House seasoning
1 cup salt
¼ cup black pepper
½ cup garlic powder

Directions:
Cut potatoes into wedges. Mix mayo, hot sauce, onion, seasoning, and pepper. Put potatoes into a large plastic baggie. Add seasoning, seal and toss. This coats the potatoes quickly. Remove potatoes and roll in corn bread dressing mix. Arrange in a single layer and bake at 375 for 45-50 minutes.

Sheri's Chili Cheese Bacon Fries

Title: Chili Cheese Bacon Fries

Oven: broil

Ingredients:
Bag of frozen French fries
1 tsp chili powder
½ cup green onion, chopped
Crumbled bacon
Shredded cheddar cheese

Directions:
Bake fries until crispy according to package directions. Sprinkle fries with chili powder, add onion, bacon and cheese. Broil 2-3 minutes.

Sheri's Broccoli Casserole

Oven: 350

Ingredients:
16 oz cooked broccoli
1 can cream of mushroom soup
½ cup shredded cheese
2 tbsp milk
1 tbsp mayo

Directions:
Mix all ingredients and place in baking dish. Bake at 350 for 30 minutes.

Sheri's Trailer Tot Casserole

Title: Trailer Tot Casserole

Oven: 350

Ingredients:
2 lbs ground beef
2 cans cheddar cheese soup
1 bag tater tots

Directions:
Do not cook meat. Press it into a 9x13 baking dish. Spread cheddar cheese soup on top of ground beef. Top with tater tots. Cover and bake at 350 for 45 minutes. Remove cover and bake an additional 15 minutes or until golden brown.

Sherri’s Marinade

Ingredients:
1 ½ cup oil
¾ cup soy sauce
¼ cup Worcestershire sauce
½ cup wine vinegar
¼ cup teriyaki sauce
2 green onions, diced
½ tsp salt
2 tsp parsley
1 tsp pepper
2 tsp garlic, minced
½ cup honey

Directions:
Mix all ingredients in the blender. Can be stored for several days. Add your choice of meat to the marinade and put in a large plastic baggie. Refrigerate overnight for a tasty treat.

Sherri's Flank Steak

Title: Flank Steak

Oven: BBQ

Ingredients:
½ cup honey
½ cup soy sauce
3 garlic cloves, minced
½ tsp dried rosemary
½ tsp chili powder
1 ½ lbs flank steak

Directions:
Mix ingredients except flank steak in a small bowl. Once blended, cover flank steak with mixture. Place in a large baggie and marinade overnight in fridge. Grill for 7 minutes per side.

Sherri's Tilapia

Title: Tilapia

Oven: Crockpot

Ingredients:
¼ cup mayo
4 pieces tilapia or other fish
½ cup shredded parmesan cheese
Juice of 2 lemons
4 garlic cloves, minced
Salt
pepper

Directions:
Mix all ingredients except the fish in a small bowl. Put 1 piece of fish on a sheet of foil. Cover fish with mixture and fold up the foil to make a packet. Add fish packets to the crock pot. Cook 3-4 hours. Check fish at 3 hours. It is done when it flakes apart easily.

Sherri's Spaghetti Sauce

Title: Spaghetti Sauce

Ingredients:
1 tbsp olive oil
1 cup diced onion
1 ½ tsp chopped garlic
28 oz crushed tomatoes
30 oz can tomato sauce
3 oz tomato paste
½ tsp basil
½ tsp oregano
¼ tsp crushed red pepper
Salt and pepper

20 oz ground beef/pork
Add garlic, salt, pepper, onion powder to taste

Directions:
Brown meat using the spices listed to taste. Drain and set aside. Heat oil in a large pot. Add onions until translucent. Add garlic, and red pepper. Stir 1 minute on medium heat. Add tomatoes and remaining spices. Mix well, add meat. Stir and simmer at least 1 hour. The longer the better.

* This freezes well. It is honestly the best sauce I have ever had and my kids love it.

Banana Chocolate Chip Muffin

Title: Banana Chocolate Chip Muffin

Calories: 200 each

Serves: 12

Oven: 400

Ingredients:
1 cup all purpose flour
1 cup whole wheat four
½ cup rolled oats
2 tsp ground cinnamon
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 ripe banana mashed
½ cup light brown sugar
2 tbsp vegetable oil
2 eggs
1 ¼ cup reduced-fat buttermilk
1 tsp vanilla
2 tbsp chocolate chips

Directions:
Line muffin cups. Combine flours, oats, cinnamon, baking powder, baking soda, salt and banana. Blend with mixer on low for 2 minutes. Add brown sugar, oil, eggs and buttermilk. Blend for 2 minutes on medium. Add vanilla and mix. Scoop into pan, top with 3-5 chocolate chips. Bake at 400 for 15 minutes.

* I HATE bananas and I promise you cannot taste them in these muffins.

Citrus Marinade

Ingredients:
½ cup orange juice
¼ cup lime juice
¼ cup lemon juice
3 garlic cloves minced
1/8 cup red chili crushed

Directions:
Combine all ingredients in a bowl and mix well. Put marinade and chicken, fish, pork or beef in a large plastic baggie. Marinade overnight in fridge.

Sweet Potatoe Fries

Ingredients:
2 sweet potatoes
1 tbsp olive oil
½ tsp chili powder
½ tsp garlic powder
¼ tsp salt
½ lime juiced

Directions:
Wash and dry potatoes and with the skin on, slice into ½ inch thick rounds. Cut rounds into ½ inch thick slices. Toss in a bowl with oil, chili powder, garlic powder and salt. On a baking sheet, spread potatoes into a single layer and roast, stirring every 10 minutes until brown and tender, 30-35 minutes. Remove from oven, transfer to bowl and sprinkle with salt.

Oven Baked Crispy Chicken

Title: Oven Baked Crispy Chicken

Calories: 375 for 3 tenders

Serves: 4

Oven: 400

Ingredients:
2 cloves garlic, minced
¼ tsp thyme
1 bay leaf
2 tsp salt
¼ tsp red pepper flakes
½ cup nonfat buttermilk
1 pound skinless chicken tenders
1 ½ cups crushed cornflakes
Nonstick spray

Directions:
Line baking sheet with foil and spray with cooking spray. In medium bowl combine the garlic, spices, and buttermilk. Add the chicken and turn until coated. Cover and refrigerate for 1 hour. Place cornflakes on a plate. Drain chicken and press into cornflakes until well coated. Bake at 400 for 15 minutes.

Messy Chocolate Peanut Butter Cookies

6 cups peanut butter
6 cups sugar
3 cups rice krispies
3 cups chocolate rice krispies
6 cups karo syrup

Mix peanut butter, sugar and karo syrup on the stove until well blended. (You can use the microwave, just be sure to check and stir every minute or so). Fold in the rice krispies until well covered. Spoon onto wax paper to cool.

* Note, you can use all plain or all chocolate rice krispies too.

Pink Lemonade Pie

1 small container of Cool Whip
1 large can pink lemonade concentrate
1 graham cracker pie crust
1 can Eagle Brand condensed milk

Mix all ingredients and pour into pie crust. Refrigerate at least 30 minutes before serving. For a different pie, try using other flavors of juice such as cranberry, fruit punch, strawberry banana and so on. Be creative!

Chicken Salad

1 can chunk white chicken
1/2 cup chopped celery
1/4 cup mayonnaise
1/4 cup dijon mustard
2 green onions, chopped
1/2 cup grapes halved
1/4 cup raisins
1/4 cup dried cranberries
1/4 pkg Knor vegetable soup mix

Mix all ingredients and spead on bread, toast, roll, bagel, english muffin or in a tortilla.

The Best Grape Salad Ever

1 8oz cream chese (softened)
1 cup sour cream
1/3 cup sugar
2 tsp vanilla
2 tbsp brown sugar
2 lbs red grapes
2 lbs green grapes
1 pkg Emeral brand pecan pie flavored pecans

Mix all ingredients except for the grapes and pecans. Once well mixed, fold in the grapes. Pour in a bowl and sprinkle the pecans on top. Serve and be ready to hand out the recipie to others!

* Note, if you mix the pecans in with the salad instead of putting them on top, they will turn a funky color.
